by JD Meier

Brian Niccol CEO of Starbucks

“We are a place for ideas.” — Brian Niccol

I find it’s helpful to understand how leaders at the highest levels manager their day.

This is a walkthrough of a day in the life of CEO Brian Niccol.

Brian Niccol is a celebrity CEO famous for turning around Taco Bell and then Chipotle.

Now he is the new CEO of Starbucks.

Brian Niccol started his role of chairman and CEO for Starbucks on September 9, 2024, replacing Laxman Narasimhan.

He previously was chairman and CEO of Chipotle Mexican Grill from March 2018 until August 31, 2024.

Under his leadership, Chipotle has seen significant growth and transformation, including a strong push into digital ordering, delivery services, and innovations in customer experience.

Niccol is widely credited with modernizing Chipotle’s brand and operations, helping the company recover from previous food safety challenges and positioning it as a leader in the fast-casual restaurant industry.

Background and Career Highlights

  • Previous Experience: Before joining Chipotle, Niccol served as the CEO of Taco Bell, where he led a successful brand revamp, focusing on innovative menu items and creative marketing strategies. His experience at Taco Bell in reaching younger demographics and driving sales through bold marketing was instrumental in his approach at Chipotle.
  • Education: Niccol holds a Bachelor’s degree in Engineering from Miami University and an MBA from the University of Chicago Booth School of Business.

  • Growth: Since taking over, Niccol has led an expansion of Chipotle locations, with a focus on increasing the number of restaurants with drive-thru lanes and entry into smaller markets.

Impact and Recognition

Niccol’s leadership has been marked by a renewed focus on digital, brand relevance, and operational excellence. His strategic initiatives have helped drive a significant increase in Chipotle’s stock price and brand perception, making it one of the most respected fast-casual brands in the world.

Brian Niccol’s tenure at Chipotle showcases his ability to lead transformative growth through innovation, customer-focused strategies, and a commitment to quality and sustainability.

CEO Day in the Life at Chipotle

Here is a day in the life as CEO at Chipotle according to Brian Niccol:

This is my daily routine:

I wake up around 5:45…6:00 in the morning.

Usually have a cup of coffee.

I like espresso, so I usually make an Americano in the morning, always hot.

And if I can, I’d like to have a cookie with it.

Head out for a workout around 7:00 AM.

Some mornings I try to do some strength training, lift weights.

And then other mornings, it’s more like going for a run, slash walk.

Get back in time,

Have a quick usually a shake, bunch of fruit, some oats, peanut butter, and a little protein powder.

I kind of bounce between that and eggs and sausage.

My youngest daughter still needs a ride to school so I usually take her to school.

If I’m in town then I usually head to the office.

I live in Newport Beach, California.

The drive from my house to the office is about 10 to 16 minutes.

Usually to the office by 8:30 or 9:00 in the morning.

Start my day usually with checking in with my assistant to go over what’s happening for the day, around 9:00 in the morning.

Usually, we have our first staff meeting at 10:00 in the morning.

That goes until about noon.

And in our staff meeting, you know all the folks that are my direct reports, we go over what’s happening in the business.

A highlight of the day is lunch is usually around 12:00.

Of course we have Chipotle.

Not every day. If I could, I would.

But not every day.

We continue after a little lunch break with our strategic initiatives meeting, which is where we review key items that we’re working on.

That usually goes from, you know, from call it 1:00 to 3:00, maybe 3:30.

I do try to end the day where you don’t have any meetings or phone calls so that you can kind of just think what happened throughout the day and what do you think you want to talk about tomorrow or are we working on the right things and are we talking about the right stuff?

And then usually we wrap it up by 5:30, 6:00, and home by 6:30 PM.

And try to walk the dog before we have dinner, usually with our kids and everybody, around 7:00 PM.

It’s usually not a sit-down dinner, but Jen and I make some quick dinner.

And then, you know, the kids complain about what they didn’t particularly like that we made.

And then we end up usually making an order for some food as well.

Post dinner, usually Jen and I go for a walk and talk about how do we do it again the next day.

We pick a show to watch.

I like to watch Sports Center.

My youngest daughter really likes Modern Family

I feel like I’ve rewatched all of them.

We’re in, I think season 10 or 11.

It’s a funny show, so it’s a good one to watch.

Once we wrap it up, we usually read for 20-30 minutes.

And then it’s rate that the lights are on past 10:00 PM.

Final Thoughts

Understanding how leaders like Brian Niccol manage their days offers us a unique window into the discipline, balance, and strategic focus that drive high performance.

Niccol’s daily routine reveals his commitment to both professional and personal excellence—a blend of focused meetings, strategic reflection, family time, and self-care.

This approach underscores a core principle of leadership: consistency in routines, adaptability in decision-making, and intentionality in both work and life.

His ability to seamlessly integrate high-level responsibilities with time for personal connection serves as a powerful reminder that effective leadership is as much about disciplined habits as it is about bold vision.
